Since this is a popular—and I know the canon, so yes, a very reasonable—theory about Ed, we would still consider her canon sound; however, if much of her personality and history isn't canon to the point that it impacts how she's played, then we would suggest you app her as an AU version.
The same goes for the age you bring her in from. If there is canon of Ed from the age you'd like to play her from, she remains a canon character; if you're playing her from a time, place, and age the canon material never touches on, she may need to be apped as an AU — but only if much of her personality and history has changed from canon.
